Whip It Up Wednesday: Mexican Chicken Roll Ups

A couple of weeks ago I was looking for a quick lunch wrap to make.  I just so happened to have all of the ingredients to this one.  You can find the original recipe here.  I altered the recipe just a little.

Mexican Chicken Roll Ups

Ingredients:

2 (8 oz.) pkgs. cream cheese, softened
2 c. cooked shredded chicken
1 1/3 c. shredded Taco cheese blend
1 can black beans, drained
1 tsp. garlic powder
1 1/2 Tbs. chili powder
1 tsp. cumin
1/2 c. diced onions
1 can Red Gold Diced Tomatoes with Basil, Garlic, & Oregano
1 tsp. cilantro
Pepper to taste
Salt to taste


The How To:

-Mix all of the ingredients together to create the filling for your roll ups.

Here are step by step pictures of the process, even though it is self explanatory (I'm a picture kinda gal!):



Cream Cheese

Add Chicken.

In goes the Taco Cheese blend.

Garlic Powder

Add Chili Powder and Cumin.

Hello onions!

Diced Tomatoes

Cilantro, pepper, salt. (Added the black beans next, but didn't get a picture...oops!)

Mix, mix, mix!!

This is what your mixture should look like.


-The next step is to cover the mixture and put it in the fridge for at least an hour.

-Once you are ready to eat your roll up, you can scoop 2 heaping spoonfuls of the mixture onto any kind of tortilla you'd like.  We used 100% Whole Wheat Soft Tortillas.


-You may choose to eat your roll up as is, or if you are looking to serve this at a party, you can cut your roll-up into halves or thirds.  It's sure to be a crowd pleaser! :)
